# What You'll Need:

→ Nuts

01 - 1 cup raw almonds
02 - 1 cup raw cashews
03 - 1 cup raw pecans
04 - 1 cup raw walnuts

→ Seasoning & Sweetener

05 - 3 tablespoons honey
06 - 2 tablespoons olive oil or melted butter
07 - 1 teaspoon ground cumin
08 - 1 teaspoon smoked paprika
09 - 1/2 teaspoon ground cinnamon
10 - 1/2 teaspoon cayenne pepper
11 - 1 teaspoon sea salt
12 - 1/2 teaspoon freshly ground black pepper

# Directions:

01 - Preheat oven to 350°F. Line a baking sheet with parchment paper.
02 - In a large mixing bowl, combine honey and olive oil. Add cumin, smoked paprika, cinnamon, cayenne pepper, salt, and black pepper. Mix thoroughly until well combined.
03 - Add all nuts to the bowl and toss thoroughly until completely coated with the spiced honey mixture.
04 - Spread nuts in a single layer on the prepared baking sheet.
05 - Roast in preheated oven for 18-20 minutes, stirring halfway through, until golden and fragrant. Monitor closely to prevent burning.
06 - Remove from oven and allow nuts to cool completely on the baking sheet. Nuts will crisp as they cool.
07 - Break apart any clusters and transfer to an airtight container for storage.

# Expert Hints:

01 -
  • It takes less than 30 minutes from start to finish, and most of that is hands-off oven time.
  • The sweet and spicy balance makes them impossible to stop eating, whether you're snacking alone or serving guests.
  • You can easily adjust the heat level and swap nuts based on what you have on hand.
  • They stay crunchy for days in an airtight container, making them perfect for meal prep or gifting.
02 -
  • Watch the nuts closely in the last few minutes of roasting, they can go from perfectly toasted to burnt very quickly.
  • Let them cool completely before tasting or storing, they will seem soft when hot but crisp up beautifully as they reach room temperature.
  • If the mixture seems too thick to coat evenly, warm the honey slightly before mixing to make it more fluid.
03 -
  • Use raw nuts instead of pre-roasted ones, you'll have better control over the final texture and flavor.
  • If you prefer extra sweetness, drizzle a bit more honey over the nuts in the last 5 minutes of roasting for a candied effect.
  • Make a double batch, they disappear faster than you think and having extra on hand is never a bad idea.
